self-employed people: how do you not panic at tax year end

The UK tax year ends on the 5th and every single year I tell myself I'll be organised and every single year I'm sat on the floor with a shoebox of receipts. My income as a photographer is all over the place. Three good months then nothing. Wedding season pays for winter, basically.

For those of you who freelance or run something small: do you set aside a fixed percentage of every payment for tax? Separate account? Do you pay an accountant or do it yourselves? I'd love to hear what actually works rather than what the guides say.
